Ingredients:

  • 2 onions
  • 3 qt. tomatoes
  • 2 bay leaves
  • 1 1/2 t. basil
  • 1 1/2 t. fennel
  • 6+ garlic cloves
  • 3 – 6 T. sugar
  • 2 – 3 T. red wine
  • 3 T. chopped parsley
  • salt and pepper to taste.

Saute the onions with the garlic.

If the tomatoes are whole they should be chopped.

Add all other ingredients except the sugar.

Simmer until it’s as thick as you like.

Sugar should be added 1 T. at a time, mixing and tasting after each addition.
