- flour tortillas (taco or fajita size)
- re-fried beans
- 1lb breakfast sausage
- chorizo (optional)
- 1 onion
- 8 eggs
- ranchero sauce
- shredded cheese
- pico de gallo
Start by heating up three skillets. One with enough oil to fry the tortillas. Another with the sausage / chorizo and the final one for the eggs later.
Fry each tortilla one at a time. I typically do two per plate if they are fajita size and one if they are soft taco size.
They will fry fast in hot oil, about 15 seconds a side.



Chop up your onion and add it to your sausage / chorizo mix. In this picture I’ve also added some sun dried tomatoes and green enchilada sauce that were leftovers in the fridge.
Open your re-fried beans and spatula them into a bowl. Cover the bowl with a paper towel and place in the microwave for 1 minute. Stir, and microwave for an additional minute.
Spread the beans over the tortillas with the spatula, and then start frying some over easy eggs.


Dish the sausage mix on top the beans and then add the eggs.
Finally garnish. My favorites are shredded cheese, ranchero sauce, pico de gallo and Super 7 Sauce. Enjoy!
